PUMPKIN & RED BEANS OLAN
Method
Soaking & cooking beans
I. Boil 1 cup water in a saucepan. Add baking soda and stir well. Add red beans and let it soak for 10 minutes. Rinse 2-3 times in cold water. Cook beans with 1 cup water in a pressure cooker.
II.While the beans is soaking – Peel skin and slice pumokin into 1 ” squares and rinse. Add salt and cook with 1/2 cup water in a sauce pan until tender.
III. Mix the cooked beans with the pumpkin and simmer.(1 min)
IV. Garnish with coconut milk, coconut oil, and curry leaves.
Alternate Baked Method with Acorn Squash
I. Cut acorn squash into half; scoop out seeds and place on a baking tray. Brush with olive oil and salt.
II.Bake for 30 minutes in a 350F oven.
III. Remove from oven ; scoop out the yellow part; slice and place in a bowl.
IV. Add cooked beans and garnish with coconut milk, coconut oil and curry leaves.
