STEAMED CABBAGE ROLLS
Method 1
- Peel outer leaves of cabbage and discard; peel inner leaves and place in salted ice cold water *(1 tsp. salt+ 2 cups) for 5 min.
- Peel and chop onion fine; peel and grate carrots.
- For filling: Saute onions in a frying pan with 1 tbsp. oil until translucent.
- Add carrots and stir- fry 1 min.
- Mix in 1/2 tsp. salt, and 1 tbsp. coconut (grated) or peanut butter.
- For rolls : Wipe each cabbage leaf dry using paper towel.
- Place 1 tbsp. filling on each leaf 1″ away from end and roll to make a cylinder.
- Use a toothpick to pin ends.
- Steam rolls in a steamer for 8-10 min.
- Serve as an appetizer, with fried rice or Naan.
Method 2 (dumplings)
- Peel outer leaves and chop cabbage fine; rinse and keep aside.
- Heat oil in a frying pan ; add mustard seeds, lentils and red/ green chili.
- When seeds splutter add water and bring to a boil.
- Add salt, chopped cabbage and stir well
- Slowly add rice rawa to form dough.
- Remove from heat and allow to cool.
- Roll into dumplings and steam in a steamer for 10 min.
- Serve rolls with cilantro chutney for breakfast/ lunch/ dinner.
Method 3
- For filling : Chop cabbage in a food processor ; add salt, pepper and grated coconut.
- Heat 1.5 cups of water in a frying pan.
- Remove from heat and add rice flour slowly to form a dough.
- Wrap in a wet muslin cloth and let cool.
- Knead into a soft dough by mixing 1 tsp. oil
- Roll into 2″ diameter balls.; flatten into circles, place cabbage filling and seal into semicircles
- Steam in a steamer for 6-8 min.
- Serve dumplings as an appetizer or snack.
